On Monday Granny aka. Sugamama welcomed us with the meal in typical polish style, which has stolen our hearts immediately. Perfect for spring!

As a vegetarian, you should only watch out in this for a non-vege worcestarshire sause (a London inspiration of Granny) and non-vegan piggy dessert (a polish Eastern inspiration :) ).

Ingredients: 1 kilo of potatoes, 4 large onions, 7-8 button mushrooms

Seasoning: herbs de provence, red sweet pepper, salt, black pepper, basil/thyme-just a pinch

PREP:

Boil potatoes in salted water until they are half-cooked add basil/thyme to the water. Fry all the spices for about 30 secs, add potatoes sprinkled generously with herbs de provence and fry them until golden. Heat the oven to 200C and bake the potatoes until all soft. Sprinkle them with olive oil.

Fry chopped onions and mushrooms separately and put them away until potatoes are ready. Serve altogether in a deep dish.

Green beans: Fried with garlic, black cumin, mustard seed garam masala and chopped dill.

Salad: Anything you have mixed with olive oil and Worcestershire Sauce (it’s not vegetarian – contains fish extract).
